In <em>Mehrbl\u00fctenhonig<\/em>, sammeln die Bienen Nektar von mehreren Blumen und Pflanzen, was zu einer abwechslungsreicheren, aber weniger einheitlichen Zusammensetzung f\u00fchrt.<\/p>\n<p>Diese Unterscheidung ist von entscheidender Bedeutung: Sie beeinflusst nicht nur den Geschmack und die Farbe des Honigs, sondern auch sein chemisches Profil, sein Aroma und seine Textur. F\u00fcr Verbraucher, die bestimmte Eigenschaften oder eine bestimmte Herkunft suchen, ist dieser Unterschied von zentraler Bedeutung.<\/p>\n<p>Die besondere Stellung des Manuka-Honigs beruht nicht nur auf dem Geschmack oder der Zusammensetzung, sondern auch auf seiner Geschichte. Um einen Honig zu klassifizieren als <strong>Monofloraler Manuka<\/strong>, muss es erf\u00fcllen <strong>f\u00fcnf<\/strong> Kriterien gleichzeitig zu erf\u00fcllen:<\/p>\n<ol>\n<li><strong>Vier chemische Marker<\/strong> \u00fcber den festgelegten Schwellenwerten vorhanden sind:\n<ul>\n<li>3-Phenylmilchs\u00e4ure<\/li>\n<li>2-Methoxyacetophenon<\/li>\n<li>2-Methoxybenzoes\u00e4ure<\/li>\n<li>4-Hydroxyphenylmilchs\u00e4ure<\/li>\n<\/ul>\n<\/li>\n<li><strong>DNA-Marker<\/strong>: nachweisbare Pollen-DNA von <em>Leptospermum scoparium<\/em> (Manuka).<\/li>\n<\/ol>\n<p><em>Anmerkung:<\/em> <strong>MGO (Methylglyoxal)<\/strong> ist eine wichtige <em>Qualit\u00e4t und Produkteigenschaften<\/em>, aber es ist <strong>nicht<\/strong> eine MPI-Anforderung f\u00fcr die Einstufung als Mono\/Multi. Multifloral Manuka enth\u00e4lt Manuka-Nektar, erf\u00fcllt aber nicht alle f\u00fcnf MPI-Kriterien oder deren Schwellenwerte.<\/p>\n<p>Die Festlegung dieser wissenschaftlichen Kriterien ist das Ergebnis jahrelanger Forschung. In den 1980er und 1990er Jahren stellten Forscher fest, dass Manuka-Honig ein anderes Profil als andere Honigsorten aufweist. W\u00e4hrend sich viele Honige weitgehend auf die Wasserstoffperoxid-Wirkung st\u00fctzen, weist Manuka einzigartige nicht-peroxidische Eigenschaften auf.
